For us, a class or a workshop is of short duration; a couple of hours, a half day. For longer experiences, consider one of our retreats.

These experiences are open to both our overnight guests and anyone else interested and can be booked for any time that you (and we) are available.


Cooking Classes

The core of Italian cooking is all about turning simple ingredients into satisfying fresh food. Learn how in our four cooking classes. In each class, you will roll up your sleeves and try your hand at making classic Italian dishes from scratch and from the garden. Once the learning is done, it’s time to relax with a glass of wine and enjoy what you’ve created!
Each class lasts around 2 hours. Cost is per person and includes lunch (that you made!) Minimum 2 participants.

Fresh Pasta with Garden Sauce 50
In this fundamentals class, learn to knead Italian-style fresh pasta by hand and how to cut and cook tagliatelle. Then gather ingredients from the garden and use them to make a sauce or pesto. Simple and satisfying

Filled Pasta - Tortelloni 60
Having mastered fresh pasta, take the next step and learn the tricks of stuffed pasta, specifically the specialty of Maremma: the tortelloni. We’ll start by making the pasta, then we’ll talk about different possible fillings while making the classic Maremman filling. Then we will learn how to successfully stuff and cook the tortelloni. Next level satisfaction!

Ricotta Gnocchi or Gnudi 60
Already mastered pasta and you’re looking for something new? Or looking for lighter (and even gluten-free) options? This is the class for you! Use ricotta to make a light fresh gnocchi (or gnudi, depending on your preference). Gather ingredients from the garden to make a sauce. And finally, whip up a ricotta-based dessert!

Fish Fish Fish 80
Inspired by our Agricucina dinner and want to know how it’s done? In this techniques class, learn the knife work necessary to clean and prepare fish and seafood. Make two fish-based appetizers typical of Andrea's cuisine as well as a seafood pasta. From the sea to table.


Baking Classes

Want to indulge in your sweet tooth? Want to know the tricks to making our bread? We have two classes for you.

Classic Cantucci 30 single / 50 couple
Perfect for dipping into Vin Santo (if you’re Italian) or your coffee (if you’re not), these double-baked almond filled classics are gorgeous. Join us for the hour and a half it takes to bake a bunch. Dip some in chocolate. Learn to be very Italian by deciding which Vin Santo suits you best. Go home with what you’ve made.

Bread Making 30 single / 50 couple
Join us to learn how we make our daily bread. So crusty and delicious that people will swear you’ve baked it in a wood oven, so easy you’ll never buy bread again, it’s always a winner. We’ll also teach you two or three variations on the theme. Go home with a fresh loaf or two.


Pottery Classes

Pottery workshops are taught by Chandra. Instruction is either in English or in (my sometimes questionable) Italian.

One Time Classes

Beginners Throwing - For couples or 2 friends. Get your hands dirty in this hour plus long workshop. I’ll demonstrate how to throw clay (not at a passerby but on a potters wheel!), then I’ll support each of you as you try it yourself. You will each make your own piece. You’ll never look at hand-made ceramics the same way! Clay, glaze, and firings are included, shipping is extra. 1 hour, 80€ for 1-2 people.

An Afternoon of Handbuilding - For groups of four to six. Join me for a fun-filled afternoon as we get creative with clay (the wine and/or laughter helps). You’ll each make a pair of your own pinch pot espresso cups, build a slab box to keep your treasures in, and sculpt a statue or face of a loved one. All clay, glazes, and firings are included. Shipping is extra. 3 hours, 240 - 300€, 4-6 people.

Throwing Intensive - Individual. Choose three or four forms that you’d like to get better at and let’s get to work. For each form, I’ll demonstrate how I do it, then you’ll try with my direct guidance, and then you’ll try it a couple of times on your own. You’ll have access to all the clay you can throw. You can decide which pieces to keep; clay, glaze, firing, and shipping are priced by weight. 4 hours, 160€ per person.


Textile Workshops

Textile workshops are taught by Chandra. Instruction is in English or in (my sometimes questionable) Italian.

Indigo and Shibori Dyeing - Love the intense blue of indigo? Learn six ways to create marks on cloth using resists and indigo. Then create your own masterpiece (or two) using either an item of your own clothing, or a piece of cloth provided by me! Minimum 4 people, maximum 8. 3 hours, €60 per person.

Eco Printing - Try the alchemical art of printing leaves on silk. Gather materials from the surrounding lands, bundle and steam them with silk and cotton, and turn it into wearable art! It’ll inspire you to look differently at the world around you. All materials provided. Minimum 2 people, maximum 8. 40€ per person.
